Zucchini Pasta with Chicken, Chorizo and Cherry Tomatoes

Serves 2


  • 2 x medium zucchini spiralised
  • 1 tbsp olive oil 2 x c
  • 2 x chicken thighs diced
  • ½ x chorizo sausage sliced
  • 1 x clove of garlic finely sliced
  • ½ x brown onion diced
  • 1 tbsp tomato paste
  • 10 x cherry tomatoes cut in half
  • ½ cup chicken stock
  • Handful of basil leaves
  • 30g Manchago cheese



  1. Using a sauté pan, heat pan then add oil, diced chicken and chorizo. Allow the chicken and chorizo to get a little colour and then add in the onion and garlic.
  2. Continue to sauté until the onion becomes translucent, then add the tomato paste and cook for another 30 seconds. Add the chicken stock and cherry tomatoes.
  3. Reduce the liquid by a third and add in torn basil leaves and zucchini. Toss in the sauce until the zucchini brightens and softens a little (2-3 min).
  4. Serve with freshly grated Manchago cheese.
