Serves 6-8
Ingredients
- 1 loaf of Turkish bread, cut in half lengthways
- 100g tomato frito
- 1 tbs olive oil
- 1 clove garlic, crushed
- 2 tbsp dried oregano
- 1/2 red onion, thinly sliced
- 150g Spinach, wilted
- 100g feta crumbled
- BBQ lamb, thinly sliced
- 1/2 punnet cherry tomatoes, halved
- 200g frozen peas, thawed
- 1/2 dozen eggs (free range)
- 1/4 bunch of flat leaf parsley, leaves picked
Method
- Preheat oven to 200C.
- Lay the Turkish bread halves on a baking tray.
- In a small bowl combine tomato paste, olive oil, garlic and dried oregano.
- Spread the tomato mixture over the cut sides of the Turkish bread.
- Top the pizzas with the sliced onion, spinach, feta, lamb, cherry tomatoes and peas.
- Using the back of a wooden spoon make 3 grooves on each bread half large enough to hold an egg.
- Carefully break the eggs into the holes and transfer to the preheated oven.
- Bake for 15 minutes until eggs are cooked through.
- Garnish with picked parsley leaves.
- Cool for 5 minutes, slice into strips and serve.
