Lamb and Spinach Turkish Pizza … a family favourite!

Serves 6-8


  • 1 loaf of Turkish bread, cut in half lengthways
  • 100g tomato frito
  • 1 tbs olive oil
  • 1 clove garlic, crushed
  • 2 tbsp dried oregano
  • 1/2 red onion, thinly sliced
  • 150g Spinach, wilted
  • 100g feta crumbled
  • BBQ lamb, thinly sliced
  • 1/2 punnet cherry tomatoes, halved
  • 200g frozen peas, thawed
  • 1/2 dozen eggs (free range)
  • 1/4 bunch of flat leaf parsley, leaves picked



  1. Preheat oven to 200C.
  2. Lay the Turkish bread halves on a baking tray.
  3. In a small bowl combine tomato paste, olive oil, garlic and dried oregano.
  4. Spread the tomato mixture over the cut sides of the Turkish bread.
  5. Top the pizzas with the sliced onion, spinach, feta, lamb, cherry tomatoes and peas.
  6. Using the back of a wooden spoon make 3 grooves on each bread half large enough to hold an egg.
  7. Carefully break the eggs into the holes and transfer to the preheated oven.
  8. Bake for 15 minutes until eggs are cooked through.
  9. Garnish with picked parsley leaves.
  10. Cool for 5 minutes, slice into strips and serve.
