Apple and Buckwheat Pikelets with Chia Jam and Mint Ricotta

Makes 30 pikelets

Ingredients – Pikelets

  • 3 cups wholemeal flour
  • 2 cups buckwheat flour
  • 1 ½ tbsp cinnamon
  • 2 ½ tbsp baking powder
  • 1 tsp salt
  • 6 eggs
  • 2 ½ cups orange juice or apple juice
  • 5 large apples grated

 

Method

  1. Mix together flours, sugar, cinnamon, baking powder and salt in large bowl.
  2. Using a wooden spoon, mix together eggs, juice and apple.
  3. Mix all ingredients together. Spoon small round dollops (size of a 50c coin) and cook in a non-stick pan over medium heat.

 

Ingredients – Berry Chia Jam 

  • 2 cups frozen berries of choice
  • 1 tbsp coconut sugar (or honey)
  • 2 tbsp chia seeds
  • 1 tbsp coconut oil

 

Method

  1. Using a small frypan heat berries and sugar on low-medium for 5-10 minutes until soft and juicy.
  2. Turn off the heat and add chia seeds. Stir and leave for 5 minutes to set.
  3. If required add more chia seeds until consistency resembles a thick custard.

 

Ingredients – Mint Ricotta

  • 400g ricotta
  • ½ bunch fresh mint
  • Zest of 1 orange
  • 1 tbsp honey

Method

  1. Place ricotta, chopped fresh mint, orange zest and honey in a bowl. Stir to combine.
