Carrot & Ginger Soup

This delicious and cooling summer treat, couldn’t be easier to make.

Ingredients

  • 2 cups non-dairy Milk (I like almond or coconut)
  • 1/3 cup + 2 tbsp Chia Seeds
  • 2-3 tbsp pure Maple Syrup, to taste
  • 1/2 tsp Vanilla Extract
  • 1/2 cup Strawberries, fresh or frozen
  • 1/2 cup Blueberries, fresh or frozen
  • 1/2 cup Raspberries, fresh or frozen

Steps

Make sure you plan ahead to allow time for the chia seeds to absorb the liquid and for the pudding(s) to set:

  • Mix together the milk, chia seeds, syrup and vanilla extract in a large bowl.
  • Add the berries and stir through evenly.
  • Separate the pudding mixture into smaller containers or mason jars once mixed.
  • Store in the refrigerator overnight or for at least 8 hours.
  • Serve cold.
